60ml Inverclyde Gin - 30ml Lemon Juice - 1 Tablespoon Sugar

Al Capone's gang smuggled in an extremely harsh gin that required Creating cocktails with more ingredients, such as citrus fruit and sugar. The drink apparently became very popular with Al Capone and his associates, and christened it the Southside. With the Clydes rich hertiage of smuggling, we put our own spin on the cocktail!
60ml Inverclyde Gin - 30ml Lime Juice - 1 tablespoon sugar - 6 mint leaves - Shake, Strain, Enjoy
Pink Lady
Unlike many of today's pink cocktails, it gets a slight fruity sweetness from the grenadine, but the botanicals of a good gin still shine and provide a nice balance of flavour.
60ml Inverclyde Gin - 30ml Pink Grapefruit Juice - 10ml Lemon Juice - 1 tablespoon Sugar - 1 Egg White

50ml gin -25ml triple sec or Cointreau - 25ml lemon juice, plus lemon zest twists to serve - 2 tsp vanilla syrup - ½ egg white - handful of ice
